Carrot and Sorakaaya Halwa

Double ka meeta(Bread Halwa)



This is one of my favourite sweet.People call it double ka meeta mostly in hyderabad.Here is the procedure:

Ingredients:

Bread -- 6 slices
Milk -- 1/2 cup
Ghee or butter --- 2 tab sp
sugar -- 2 tab sp
Cashew nuts -- 10 broken
Cardomom powder --- 1 teasp

Procedure:
1)Aply ghee or butter to the bread slice and tost them in toster or in the grill till golden brown color.
In the original recipe we deep fry the bread slices in ghee or oil and ghee mix that will be very rich and high col. so I don't want to do that i adopted this way
2)Now cut bread slice in small peaces and soak them in milk for few min.
Make sugar syrup with sugar and a little water (just add sugar and 1 tab sp water and bring to a boil)
3)Then add bread slice to the syrup and mix well ,Now add 1/2 tea sp ghee and mix once and let it cook for few min. stir in between.
4)Now fry cashew nuts in the remaining ghee and add this to mixture, add cardomom powder mix well and remove from heat
SERVE HOT (this will be taste good when it is hot)
one more thing i want to share with you all that is you can add kova(mava) to this halva when we are adding cashews
you can use condensed milk instead of normal milk this will give a rich taste to halva
And bread should be 1 day old
You can increase the quantity according to your requirement

Poornaalu



Poornam boorelu is one of the most popular and traditional sweet from Andhra. Some parts in Andhra they call this sweet as poornalu or boorelu we make this sweet for varalakshmi vratam and ganesh chaturthi.
Here 's the process of making the traditional Andhra sweet.

For filling:
Channa dal (split chick pea)—1 cup
Grated jaggery—1 cup
Cardamom powder – 1/2 tea sp

For dipping:
1 cup – urad dal (black gram)
11/2 cup – rice
1 tea sp – rava (semolina)
Salt – a pinch
Oil for frying

1)Soak dal and rice together for 3-4 hours and grind in to a smooth batter like thick dosa batter remove and keep a side
2)Soak channa dal for 10 minutes and cook it very soft with enough water then add grated jaggery and mix together well and cook till it becomes thick then mash well together keep stirring continuously as dal tends to stick to the vessel and mixture become like a ball now add cardamom powder mix well and turn off the heat and let it cool
This will take 30 min to cook
3)Make small bite size balls from channa dal mixture
4)Take 2cups of dosa batter 1tea sp semolina, a pinch of salt mix well this should be like a thick bajji batter
5)Heat oil in a deep frying pan take channa dal mixture ball dip it in the dosa mixture(rice and black gram dal mixture ) drop it in to the hot oil and fry till golden brown color remove and serve hot with ghee.

Mixed Nut Brittle


I used to buy chikkis from supermarket,I never thought i could make them.This one is a perfect idea for gifts to some one you want to give a delicious gift. And it gives an instant energy after long working hours.

Ingredients:
1)Ground nuts - 2cup
2)Cashew - 1cup
3)Almonds-1cup
4)Sugar- 3/4cup
5)Jaggery - 1cup
6)cardamon-3
7)Saffron-a pinch

Procedure:

1. Roast all nuts for few sec. and grind in to a coarse powder(if any big pieces are left while grinding leave them like that only) and leave a side.
2. In a heavy bottom pan combine sugar, jaggery, water and boil till jagger and sugar dissolves in to water.
3. Now remove from the heat and strain this syrup in to another heavy bottom pan (this processes is to remove any stones or and dirt from the jaggery and sugar).
4. Now bring back this syrup to the heat and bring to a full boil now you can see lot of bubbling and rising to the surface stir continually and cook till when you drop a bit of this syrup in to cold water it will solidify like a ball.
5. When syrup reaches this stage immediately add nuts and cardamom powder, saffron
6. And stir constantly for a few min. and remove from the heat
7. And immediately pour this in to a greased plate or try.
8.When it is hot, make lines with a knife and leave it to cool.
9. When cooled break this in to pieces.

Pesarapappu Halwa

This is first sweet i made,which came out very well,and now its my husband's favourite.Ok,let me share the process.Its so simple though.

Ingredients:
Pesarapappu or moongdal - 1cup
(soak it in water over night nearly 8 hrs)
Sugar-2+1/2 cup
Milk-1cup
Cardamom-3
Cashews-small amount for garnishing(usually i use more..:))
butter or ghee-2tb spoon

Procedure:
1)Grind the moondal by adding small amount of water.
2)Heat 1 tb spoon ghee in a pan on medium heat and then add the grinded moongdal to it along with milk.
3)Stir the mixture continuously until liquid gets evaporated.
4)Add sugar and mix it well untill its dissolved.Stir the mixture till it gets thick.Once the mixture reaches the thickness of halwa,its done.
5)Fry the cashews in ghee in other pan and garnish.

Delicious Moongdal halwa is ready.
